Christmas Sugar Cookies

⅔ cup shortening
1½ cups sugar
2 eggs, beaten
1 tablespoon orange juice
1 orange rind, grated
2 cups flour
2 teaspoons baking powder
1 teaspoon salt

Lucy's Note: My grandmother always brought cookies for the holidays - packed in round decorative tins, between sheets of wax paper. When I bake Christmas cookies with my granddaughters, Haley and Vanessa, I show them their great-great-grandma Linsley's "right way" to wrap them.

Cream shortening and sugar together. Add the eggs, orange juice, orange rind, and mix well. Sift together the dry ingredients and add to the mixture. Mix thoroughly and chill the dough. Roll out and cut with a cookie cutter. Arrange on greased cookie sheets. Bake in 350 - 375 degree oven for 12 - 15 minutes.
