Sour Milk Oatmeal Muffins

1 cup rolled oats
1 cup sour milk

1 egg
⅓ cup oil, melted butter or shortening
½ cup brown sugar, packed
1 teaspoon baking powder
½ teaspoon soda
½ teaspoon salt
1 cup flour

Lucy's note: They never "wasted a drop or a speck of anything" as my grandmother said in one of her letters. When their fresh unpasteurized milk from Jensen's soured, they used it in recipes like this one.

Mix oats and milk and let stand for one hour prior to mixing, preheat oven to 400 degrees

Mix shortening, egg and sugar in a bowl. Mix the dry ingredients in a separate bowl. Add the dry ingredients alternately to the milk and oatmeal, and add the egg, sugar and oil mixture.

Put batter into greased muffin tins (or use paper liners)

Bake 20 - 25 minutes in 400 degree oven.

Makes one dozen.
