½ cup butter, shortening or fat drippings
1 cup sugar
1 cup sour milk
Sift together:
2 cups flour
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
1 teaspoon soda
1 teaspoon baking powder
1 egg (optional - if available)
1 cup raisins or chopped apple (optional - if available)
Lucy's Note: This was a popular recipe from the First World War, as it allowed for flexible ingredients using scarce food rations. The government was promoting the use of "Hoover Flour" Martha and James both baked these cakes and wrote about them in their letters.
Cream together sugar and shortening; add sour milk (and egg) and beat well. Add dry ingredients. Bake at 350 degree oven for about 30 minutes - or until done when tested.
