Esther's Apple Cake

1½ cups oil
2 cups sugar
2 beaten eggs

3 cups flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla
4 large apples, peeled, cored, and chopped fine
½ cup nuts

Thoroughly mix the oil, sugar, and eggs.

Add the egg mixture to the dry ingredients, apples and nuts. Mix well. Pour into a 9 x 13-inch greased baking pan. Bake at 350 degrees for 40 minutes.
