Ruth's Rice Pudding

Large Recipe
2 cups steamed rice
2 eggs
½ cup milk
½ cup sugar
2 steamed or cooked apples OR ½ can pineapple

Small Recipe
1 cup steamed rice
2 eggs
¼ cup milk
4 tablespoons sugar
1 steamed or cooked apple OR 4 tablespoons canned pineapple

Lucy's Note: This is a recipe Ruth sent to James in a letter (with spelling corrected here) He had just written about his disastrous first solo attempt at rice pudding - having miscalculated how much the rice would swell in cooking.

Beat yolks of egg well, then mix yolks of eggs and rice, milk, sugar, and fruit together. Fold in stiffly beaten whites of eggs. Then bake 30 minutes at 350 degrees in a well buttered baking dish.
